Insalata Caprese: A tomato slice, fresh basil, and Buffalo Mozzarella!

Hello All!

As you can probably guess, I have been super busy the past week or so. I have midterms coming up in my French and Italian courses and I am currently grading midterms for about 160 students in the two classes I TA for! On top of that, I did something CRAZY…I booked a 40 day trip to Italy for this summer-alone!

I have been to Italy 3 times on tours, always with a large group, but I have never been on a trip (even in the U.S.) by myself! I went to Italy in March of 2012 and wanted to go back last summer, but couldn’t find anyone to go with me. All the guys I’ve dated and all the friends I have were/are either busy, don’t like traveling, didn’t have the money, or had other priorities, so I had to take the plunge and commit to going by myself.

Of course, like anyone, I would love to go with friends or a significant other, but I’ve tried to find travel buddies for a year and was unsuccessful, so I realized if I want to go, I have to go alone. I always stay home or don’t try new stuff because I seldom, if ever, find companions that are willing to do stuff with me, but not this time. I realized that I don’t want to waste my opportunities to experience new things and see new places just because I don’t have anyone to do them with. It’s a valuable lesson to learn and I think it will teach me positive things about myself and help me to change things about my personality for the better!

I’m terrified, but I know it will be fun and I will learn a lot!

I depart on May 11th and will return on the 20th of June. Along the way I will visit Florence, Udine, Bassano del Grappa, Venice, Naples, Assisi, and Rome! I will be starting a new blog and vlog series called “Italia in 40” and I hope you guys will join me on this adventure!

My weight loss is going well! I’ve lost about 5 lbs and plan to lose about 15 more before May! This trip gives me extra motivation to get in shape before May, so I will be kicking into high gear for the “Sprint to May Challenge,” once midterms are over!

I know I have been slacking on my recipe posts and I apologize. Since my mother and I have switched to an all organic diet I do have a lot of new recipes to post, so I will get on the ball and try to post more regularly.

Lent is also coming so I can’t wait to reveal to you guys what I’m giving up!
